Here\u2019s an easy and healthy version of Argentine empanadas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u0406\u043d\u0433\u0440\u0435\u0434\u0456\u0454\u043d\u0442\u0438<\/h2>\n\n\n\n<p><strong>Empanada Dough<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600 g flour<\/li>\n\n\n\n<li>270 g warm water<\/li>\n\n\n\n<li>100 g extra virgin olive oil<\/li>\n\n\n\n<li>1 tsp salt<\/li>\n<\/ul>\n\n\n\n<p><strong>Chicken Filling<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp extra virgin olive oil<\/li>\n\n\n\n<li>500 g chicken breast (2 breasts)<\/li>\n\n\n\n<li>1 \u00bd cups broth from cooking the chicken breasts<\/li>\n\n\n\n<li>1 large onion, finely chopped<\/li>\n\n\n\n<li>1 red bell pepper<\/li>\n\n\n\n<li>1\/3 cup green and black olives, chopped<\/li>\n\n\n\n<li>\u00bd tsp sweet paprika<\/li>\n\n\n\n<li>\u00bd tsp cumin<\/li>\n\n\n\n<li>3 boiled eggs<\/li>\n\n\n\n<li>2\u20133 tbsp raisins<\/li>\n\n\n\n<li>Salt and ground pepper to taste<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Step-by-Step Instructions<\/h2>\n\n\n\n<p><strong>For the empanada dough<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>In a bowl, heat half of the water with the salt for a few seconds in the microwave, stirring until the salt dissolves. Add the rest of the water and oil.<\/li>\n\n\n\n<li>Add the flour and 1 tsp of salt. Mix well until a compact dough forms. Shape it into a ball, cover the bowl with plastic wrap, and let it rest in the fridge for at least 30 minutes. You can store this dough in the fridge for up to 2 days.<\/li>\n<\/ol>\n\n\n\n<p><strong>For the filling<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Meanwhile, prepare the filling. Cook the chicken breasts in a pot with water and salt. Once it starts boiling, let it simmer for about 20 minutes (depending on the size of the breasts). Set aside the cooking liquid and the chicken separately. When the chicken cools, shred it with your hands.<\/li>\n\n\n\n<li>In another pot, boil the eggs for 12 minutes. Peel them when they\u2019ve cooled and set aside.<\/li>\n\n\n\n<li>Meanwhile, heat a frying pan with 2 tbsp of olive oil and saut\u00e9 the onion for 5 minutes. Then add the bell pepper, a pinch of salt, and cook for another 5 minutes.<\/li>\n\n\n\n<li>Add the shredded chicken, 1 \u00bd cups of the reserved cooking liquid, and the spices. Cook over medium heat for 15 minutes or until most of the liquid evaporates. Then add the olives, raisins, and chopped boiled eggs. Mix well and let the filling cool before assembling the empanadas.<\/li>\n<\/ol>\n\n\n\n<p><strong>To assemble and bake the empanadas<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Lightly flour your countertop and roll out the dough to about 3\u20134 mm thick. Use a bowl or plate to cut circles about 10\u201312 cm in diameter.<\/li>\n\n\n\n<li>To fill the empanadas, take a dough circle and place one or two tablespoons of filling on one half. Moisten the edges of that half with water. Fold the dough in half to close it, then seal the edges. You can make the traditional Argentinian braided edge or simply press the edge with a fork.<\/li>\n\n\n\n<li>Place the empanadas on a baking tray lined with parchment paper and bake them at 220\u00b0C (425\u00b0F) for 20\u201330 minutes in a preheated oven.<\/li>\n<\/ol>\n\n\n\n<p><strong>Freezing tip:<\/strong> If you&#8217;d like, you can freeze some empanadas before baking them. Les dejo con una versi\u00f3n f\u00e1cil y saludable de las empanadas argentinas.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientes<\/h2>\n\n\n\n<p><strong>Masa de empanadas&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>600 g de harina&nbsp;<\/li>\n\n\n\n<li>270 g de agua tibia<\/li>\n\n\n\n<li>100 g de aceite de oliva virgen extra<\/li>\n\n\n\n<li>1 cdta. de sal<\/li>\n<\/ul>\n\n\n\n<p><strong>Relleno de pollo<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 Cdas. de aceite de oliva virgen extra<\/li>\n\n\n\n<li>500 g de pechuga de pollo (2 pechugas)&nbsp;<\/li>\n\n\n\n<li>1+\u00bd tazas de caldo de cocer las pechugas de pollo<\/li>\n\n\n\n<li>1 cebolla grande, picada finamente<\/li>\n\n\n\n<li>1 pimiento rojo<\/li>\n\n\n\n<li>1\/3 taza de aceitunas verdes y negras, en trocitos<\/li>\n\n\n\n<li>1\/2 cdta. de piment\u00f3n dulce<\/li>\n\n\n\n<li>1\/2 cdta. de comino<\/li>\n\n\n\n<li>3 huevos cocidos<\/li>\n\n\n\n<li>2-3 Cdas. de pasas<\/li>\n\n\n\n<li>Sal y pimienta molida al gusto<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Elaboraci\u00f3n paso a paso<\/h2>\n\n\n\n<p><strong>Para la masa de las empanadas<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>En un bol calienta la mitad del agua con la sal durante unos segundos en el microondas, remueve hasta que la sal se disuelva. A\u00f1ade el resto del agua y el aceite. Echa la harina y 1 cdta. de sal. Mezcla bien hasta formar una masa compacta, haz una bola y tapa el recipiente con film para dejarla reposar en la nevera un m\u00ednimo de 30 minutos. Puedes guardar esta masa en la nevera hasta 2 d\u00edas.<\/li>\n<\/ol>\n\n\n\n<p><strong>Para el relleno<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Mientras tanto, prepara el relleno de las empanadas. Cuece las pechugas de pollo en una cazuela con agua y sal, cuando rompa a hervir dejar unos 20\u2019 (dependiendo del tama\u00f1o de la pechuga). Reserva por un lado el l\u00edquido de cocci\u00f3n y por otra parte el pollo. Cuando est\u00e9 templado desmen\u00fazalo en trozos con las manos.<\/li>\n\n\n\n<li>En otro cazo cuece los huevos durante 12 minutos. P\u00e9lalos cuando est\u00e9n templados y reserva.<\/li>\n\n\n\n<li>Mientras, coloca una sart\u00e9n al fuego con 2 Cdas. de aceite de oliva y sofr\u00ede la cebolla durante 5\u2019. Despu\u00e9s a\u00f1ade el pimiento, un poco de sal y cocina 5\u2019 m\u00e1s.<\/li>\n\n\n\n<li>Incorpora el pollo desmenuzado, 1 + \u00bd tazas del l\u00edquido de cocci\u00f3n y las especias. Cocina a fuego medio durante 15\u2019 o hasta que no quede casi caldo. Entonces a\u00f1ade las aceitunas, las pasas y el huevo cocido partido en trozos. Revolvemos todo el relleno y dejamos enfriar para poder rellenar las empanadas.<\/li>\n\n\n\n<li>Enharinamos la encimera de la cocina y estiramos la masa con el rodillo hasta que nos quede con un espesor de 3-4 mm. Cortamos las empanadillas utilizando un bol o plato para marcar el c\u00edrculo de unos 10-12 cm de di\u00e1metro.<\/li>\n\n\n\n<li>Para rellenar las empanadas coge un disco de masa coloca una o dos cucharadas del relleno en una de las mitades del disco y moja con agua los bordes de esa mitad. Dobla por la mitad para cerrarlas y ahora toca hacer el repulgue o como aqu\u00ed dir\u00edamos cerrar la empanada. Podemos hacer el t\u00edpico trenzado de las empanadillas argentinas o el cierre m\u00e1s b\u00e1sico que consiste en aplastar el borde usando un tenedor.<\/li>\n\n\n\n<li>Coloca las empanadas sobre una bandeja de horno con papel vegetal y horn\u00e9alas durante 20-30\u2019 a 220\u00ba con el horno previamente <em>precalentado<\/em>.<\/li>\n\n\n\n<li>Si quer\u00e9is puedes congelar algunas empanadillas antes de hornearlas y as\u00ed las tendr\u00e1s listas para otro d\u00eda. Col\u00f3calas sobra una bandeja o un plato que te quepa en el congelador y deja que se congelen por completo.
